6 ears corn, shucked
2 tbs. olive oil
1 tsp. smoked paprika
1 tsp. cumin
1/4 tsp. black pepper
1/4 tsp. kosher salt
1/2 cup fresh cilantro, chopped
1 small red onion, chopped
1 jalapeno, deseeded and finely chopped (optional)
1/2 cup crumbled cotija cheese (can substitute with feta)
4 tbs. Best Foods® Real Mayonnaise
Juice of one lime

1. Rub corn with olive oil. Heat a grill pan over medium-high heat. Grill the corn on all sides until charred and slightly cooked about 8-10 minutes. Remove from heat and allow to cool slightly.

2. Using a large bowl and knife cut the corn from the cob. Add the rest of the ingredients to the bowl and stir together to combine. Season with salt and pepper to taste. Top with extra chopped cilantro. Serve immediately.
